In simple terms, interest-led learning is fueling your child's natural interest in a topic and building on it. As a culture, we tend to classify some knowledge as more important than others. I won’t argue that we need to be proficient in reading, writing, and math skills. But anything after that I am following their passions and fueling it.
If I give my kids a love for learning and the skills to research and learn, they can teach themselves anything they need to know later on. They will be self-motivated to reach for things they want to know more about. I am careful not to disregard an interest. Every interest can be stretched to fit other useful learning into it and all under the guise of something cool or interesting to them.
Follow their curiosities, follow the tadpoles, the beetle, the rocket ship, the algae, the smell, the engineering, follow whatever they are interested in and they will surprise you by how much they learn and grow! And do not worry, fueling natural interests will not hold them back. It will only create a healthier environment for all other knowledge to thrive in.
